Caption:Biological membranes consist of a lipid bilayer with associated proteins. The hydrophobic "tails" of individual lipid molecules associate to form the core of the membrane. The hydrophilic "head" are in contact witht he aqueous medium on either side of the membrane. Most membrane proteins span the lipid bilayer; others are attached to the surface in various ways.
